Indulge in this easy and irresistible chocolate treat for any age.
Ingredients:
  • 125g soft butter
  • 110g caster sugar
  • 4.40 gm vanilla extract
  • 1 egg
  • 150g plain flour
  • 75g self-raising flour
  • 2.50 gm bicarbonate of soda
  • 35g cocoa powder
  • 125g unsalted peanuts
  • 100g white chocolate bits
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays with non-stick baking paper.
  • Using electric beaters, cream together butter, sugar, and vanilla until light and fluffy. Mix in the egg until well combined. Sift flours, cocoa, and bicarbonate of soda over the butter mixture. Stir in peanuts and chocolate bits until fully incorporated.
  • Shape the mixture into tablespoon-sized balls and evenly distribute about 6 balls on each tray. Bake for 12 minutes. Allow the cookies to cool on the trays for 5 minutes before transferring to a wire rack to fully cool and firm up. Once completely cooled, store in an airtight container.
