Choc-caramel fudge

Indulge in delightful choc-caramel fudge bites.
Ingredients:
  • 395g can sweetened condensed milk
  • 180.00 gm brown sugar
  • 55.60 gm glucose syrup
  • 125g butter, chopped
  • 90g dark chocolate, finely chopped
  • 26.80 gm golden syrup
  • 90g white chocolate, finely chopped
Instructions:
  • Prepare a 20cm square cake pan by greasing it and lining the base and sides with baking paper, ensuring a 2cm overhang on all sides.
  • Combine half of the condensed milk, half of the sugar, half of the glucose syrup, and half of the butter in a saucepan. Heat over low heat, stirring constantly until the mixture becomes glossy and the sugar is dissolved, about 5 to 6 minutes.
  • - Turn up the heat to medium-low and bring the mixture to a gentle simmer, stirring it constantly. Let it cook for 4 to 5 minutes or until it thickens and starts pulling away from the side of the pan. Take it off the heat and stir in the dark chocolate until it's fully melted and combined. Transfer the mixture to the prepared pan, smoothing out the top. Allow it to set for 30 minutes.
  • Prepare the saucepan by washing and drying it. Combine the remaining condensed milk, sugar, glucose syrup, butter, and golden syrup in the saucepan. Cook on low heat, stirring constantly, until the mixture is glossy and the sugar has dissolved, about 5 to 6 minutes.
  • - Turn up the heat to medium-low and bring the mixture to a gentle simmer while stirring continuously. - Keep stirring for 4 to 5 minutes until the mixture thickens and begins to pull away from the side of the pan. - Take the mixture off the heat and stir in white chocolate until fully melted and combined. - Spoon the mixture over the fudge in the pan and let it sit for 30 minutes. - Cover the pan with plastic wrap and refrigerate for 6 hours until the fudge is firm.
  • Cut the ingredients into 2.5cm pieces before serving.
