Choc-hazelnut cake with malted cream cheese icing

Indulgent choc-hazelnut cake topped with creamy malted icing - a party must-have!
Ingredients:
  • 150g dark chocolate, chopped
  • 150g butter, chopped
  • 180ml milk
  • 220g brown sugar
  • 150g self-raising flour
  • 75g hazelnut meal
  • 3 Free Range Eggs, lightly whisked
  • 70g milk powder
  • 250g cream cheese, softened
  • 225g butter, extra, softened
  • 320g icing sugar
  • 100g Maltesers
  • 50g dark chocolate, extra, finely grated
Instructions:
  • Preheat the oven to 180°C. Grease and line a 20cm round cake pan with baking paper.
  • In a medium saucepan over low heat, gently melt the chopped chocolate, butter, and milk together, stirring continuously until smooth. Let it cool for 15 minutes before using.
  • - Pour the chocolate mixture into a large mixing bowl. - Add brown sugar, flour, hazelnut meal, egg, and half of the malted milk powder. - Use an electric mixer on medium speed to beat the mixture for 3 minutes until it changes color, scraping down the sides of the bowl occasionally. - Pour the batter into the prepared pan and smooth the surface. - Bake for 1 hour or until a skewer inserted in the center comes out clean. - Allow the cake to cool in the pan for 15 minutes before transferring it onto a wire rack to cool completely.
  • In a bowl, blend cream cheese, extra butter, icing sugar, and remaining malted milk powder using an electric mixer until smooth.
  • Slice the cake into three layers using a large serrated knife. Begin by placing one layer of cake on a serving plate and spreading one-third of the cream cheese mixture over it. Repeat the layering process with the remaining cake layers and cream cheese mixture. Finish by topping with Maltesers and a sprinkle of grated chocolate before serving.
