Choc-orange biscuits

Decadent chocolate and zesty orange combine beautifully in these irresistible cookies.
Ingredients:
  • 250g unsalted butter, softened
  • 150g icing sugar mixture
  • 375g plain flour
  • 1 tsp finely grated orange rind
  • 120g dark chocolate
  • 2 slices candied orange (see notes), cut into small wedges
Instructions:
  • Cream together the butter and icing sugar until light and fluffy using an electric mixer. Mix in the flour and citrus zest until just combined. Transfer the dough to a floured surface, divide in half, and shape each half into a 25cm-long log. Wrap the logs in plastic wrap and refrigerate for 30 minutes.
  • 1. Preheat your oven to 170°C and line two baking trays with baking paper. 2. Cut each log into 25 1cm-thick slices. 3. Arrange the rounds on the trays, ensuring they are 2cm apart. 4. Bake for 10-12 minutes, or until lightly golden. 5. Allow the cookies to cool on a wire rack.
  • Place the chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring each time, until the chocolate is melted and smooth.
  • After the biscuits have cooled a bit, delicately dip them halfway into luscious melted chocolate. Place them on a wire rack and gently press a piece of candied orange in the center. Let them sit until the chocolate hardens. Store the biscuits in an airtight container for up to a week.
