Choc orange mousse

Indulgent chocolate orange mousse.
Ingredients:
  • 200g dark chocolate, chopped
  • 2 Brand Navel oranges, rind finely grated, juiced
  • 2 free range eggs, separated
  • 300ml thickened cream
  • 32.00 gm brown sugar
  • 2 tsp orange zest, to garnish
Instructions:
  • In a medium heatproof bowl set over a saucepan of simmering water, combine chocolate, orange rind, orange juice, and vanilla. Stir constantly for 3 minutes until smooth. Remove from heat and let it cool for 20 minutes. Mix in the egg yolks.
  • - Beat cream with an electric mixer in a bowl until soft peaks form. Fold three-quarters of the cream into the chocolate mixture. Chill the rest of the whipped cream. - Beat egg whites and sugar in a bowl until thick and glossy. Fold into the chocolate mixture. - Divide the mixture among 6 x ¾-cup capacity serving glasses. Chill for 2 hours until set.
  • Finish the mousse by layering the remaining cream over the top and garnishing with a generous sprinkle of orange zest.
