Try a divine twist on a classic with this decadent chocolate-orange crepe cake by Curtis Stone.
Ingredients:
  • Spray olive oil
  • 70.95 gm caster sugar
  • 20.00 gm cocoa powder
  • 4 eggs
  • 515.00 gm milk
  • 262.50 gm freshly squeezed orange juice
  • 2 navel oranges, peeled, cut crossways into 7mm-thick slices, seeds removed
  • 500g Deli full-cream ricotta
  • 126.25 gm brand thickened cream
  • 24.00 gm brand icing sugar, sifted
  • Finely grated zest of 1 orange
Instructions:
  • Sift together flour, sugar, and cocoa powder in a bowl, then create a well in the center. In a separate jug, whisk eggs and milk together, then slowly incorporate into the dry ingredients, stirring gently with a whisk until just combined (avoid overmixing).
  • - Coat a 20cm non-stick frying pan with oil and heat over medium-high heat. - Fill a 1/4 cup measure two-thirds full with batter, then pour into the center of the pan. - Tilt the pan to evenly spread the batter across the base. - Cook for about 1 minute until lightly colored underneath, then flip and cook for another 30 seconds. - Transfer to a wire rack to cool.
  • Continue the process, spritzing and reheating the pan between crepes, adjusting heat if necessary to prevent overbrowning, to create a total of 20 crepes, neatly stacking them as they cool.
  • For the syrup, pour freshly strained orange juice into a saucepan, add sugar, and gently stir over low heat until sugar dissolves. Increase heat to medium-high and bring to a boil, simmer for 7 mins until thickened. Take off heat, mix in orange slices, and let it cool to room temperature.
  • Using an electric mixer, blend the ricotta, cream, sugar, and orange zest until well combined. Spread a heaping tablespoon of the filling thinly over a crepe using a spoon. Repeat with another crepe, stacking them neatly. Continue layering with the rest of the ricotta mixture and crepes. Finally, cut into wedges and serve with orange slices and syrup on the side.
