Crowd-pleasing coconut bar cookies with a brown sugar crust, chocolate chips, and luscious coconut filling.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.5 cup butter
  • 0.5 cup packed brown sugar
  • 1 (12 ounce) package semisweet chocolate chips
  • 1.5 cups shredded sweetened coconut
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking powder
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Combine 1 1/2 cups of flour, butter, brown sugar, and 1/4 teaspoon of salt in a bowl. Use a pastry blender to mix until crumbly. Press the crust mixture firmly into a 9x13-inch baking pan.
  • Bake in the already hot oven until the filling is set, around 10 minutes. Sprinkle chocolate chips over the crust and put it back in the warm oven until the chips soften, approximately 1 minute. Take it out of the oven and delicately spread the melted chocolate over the crust. Keep the oven on.
  • Whisk eggs in a bowl until fluffy; mix in shredded coconut, 2 tablespoons flour, vanilla extract, baking powder, and 1/4 teaspoon salt. Spread the mixture over the chocolate crust.
  • Bake until lightly golden and center is firm, about 15-20 minutes. Let cool completely for at least 1 hour, then cut into 1x3-inch bars.
