Decadent chocolate Guinness® cake with a moist, pudding-like texture. Perfect with whipped cream or ice cream.
Ingredients:
  • 1 cup Irish stout beer (such as Guinness®)
  • 1 cup butter
  • 2 cups white sugar
  • 0.75 cup unsweetened cocoa powder
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons sour cream
  • 1 splash vanilla extract
  • 2 teaspoons baking soda
  • 2.25 cups all-purpose flour
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C. Line a 9-inch cake pan with parchment paper and grease it.
  • In a large saucepan, gently melt butter with stout beer over medium-low heat until the beer appears glossy, about 3 to 5 minutes.
  • Take the beer mixture off the heat. Whisk in sugar and 3/4 cup plus 2 tablespoons cocoa powder until smooth. Incorporate 1/2 cup plus 2 tablespoons sour cream. Blend in eggs and vanilla extract. Stir in baking soda and gradually add flour until the batter thickens and becomes lump-free, about 5 minutes.
  • Transfer the batter into the pan that has been greased and lined with parchment paper.
  • Bake in the preheated oven for about 40 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool for at least 4 hours before serving.
