Indulge in a decadent Guinness chocolate cake with velvety bitterness and subtle tang, topped with sweet sour cream icing. A rich and dark grown-up treat reminiscent of the famous Irish stout. Cheers to a delicious dessert!
Ingredients:
  • 100 g unsalted butter plus extra for greasing
  • 75 g dark chocolate (70% cocoa solids)
  • 200 ml Guinness plus extra for the icing
  • 200 g plain flour
  • 20 g cocoa powder
  • 1 teaspoon baking powder
  • 2 large free-range eggs
  • 200 g golden caster sugar
  • 3 tablespoons sour cream
  • 200 g icing sugar
Instructions:
  • Begin by dicing the butter and chopping the chocolate. Combine them in a heatproof bowl over simmering water until melted. Allow it to cool to room temperature. Mix in the Guinness - it's okay if it thickens, as it will blend well later. Preheat the oven to 180°C/350°F/gas 4 and butter a 23cm cake tin. In a bowl, combine flour, cocoa, and baking powder. In a separate bowl, beat eggs and sugar until fluffy. Blend in half of the chocolate mixture, then half of the flour mixture. Repeat with the remaining chocolate and flour. Pour the batter into the greased tin and bake for 40-45 minutes. If the top browns too quickly, cover with foil after 30 minutes. Let the cake cool before transferring to a wire rack. For the icing, mix sour cream, icing sugar, and 2 tablespoons of Guinness until smooth. Adjust consistency with more icing sugar as needed. Spread over the cake and enjoy.
