Indulgent St. Patrick's Day treat: Guinness cake mixed into creamy vanilla ice cream.
Ingredients:
  • 125g unsalted butter
  • 35g cocoa powder
  • 125ml guinness
  • 135g plain flour, sifted
  • 2.50 gm baking soda
  • 200g caster sugar
  • 8.80 gm vanilla extract
  • 80g sour cream
  • 1.5L (6 cups) good-quality vanilla ice cream, softened
Instructions:
  • Preheat your oven to 180C, then generously grease and line an 18cm springform cake pan.
  • In a saucepan over medium heat, melt butter with cocoa and Guinness. Once melted, let it cool.
  • In a bowl, combine flour, baking soda, and sugar. Mix in the Guinness mixture. Add vanilla, egg, and sour cream, then mix until combined.
  • Transfer the mixture into the greased pan and bake for 50-60 minutes until fully cooked, and a skewer inserted in the middle comes out with a few moist crumbs. Allow the cake to cool for 10 minutes before flipping it onto a wire rack to cool completely.
  • Crumble the cake finely. Mix the softened ice cream with the cake crumbs in a bowl. Transfer to a large plastic container, cover, and freeze for 3-4 hours until firm.
  • Allow the ice cream to gently soften before digging in.
