Indulgent Guinness chocolate cake with a hint of stout beer - ideal for celebrating St. Patrick's Day.
Ingredients:
  • 1 cup Guinness extra stout
  • 10 tablespoons unsalted butter
  • 3/4 cup unsweetened natural cocoa
  • 1 1/2 cups superfine sugar
  • 1/2 cups dark brown sugar
  • 3/4 cup sour cream
  • 2 eggs
  • 1 tablespoon pure vanilla extract
  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1/2 cream cheese frosting recipe
Instructions:
  • Preheat the oven to 350°F, then generously butter the bottom of an 8 or 9-inch springform pan and line it with a round of parchment paper.
  • Combine Guinness and butter in a large saucepan, heat until butter melts. Whisk in cocoa powder and sugars. Remove from heat, let cool to room temperature.
  • Mix together the sour cream, eggs, and vanilla extract until fully combined. Then add this mixture to the butter-stout blend and whisk until smooth.
  • Combine the dry ingredients: In a separate bowl, mix the flour, baking soda, and salt. Add this mixture to the stout-butter combination and whisk until just combined.
  • Pour the batter into the prepared pan and tap it on the countertop to remove air pockets. Bake at 350°F for 50 to 60 minutes.
  • Cool: Let it cool on a wire rack until reaching room temperature. Gently slide a knife along the edges to loosen the cake from the pan and remove the springform ring.
  • Spread the delicious frosting over the cooled cake before indulging in its sweet perfection.
