Guinness Ice Cream

Indulgent Irish stout beer ice cream with smoky chocolate notes. Perfect for St. Patrick's Day or any day. Pair with brownies or chocolate cake for a decadent treat.
Ingredients:
  • 2 cups heavy whipping cream
  • 1.5 cups whole milk
  • 1 vanilla bean
  • 6 egg yolks, beaten
  • 1 (12 fluid ounce) can or bottle Irish stout beer (such as Guinness®)
Instructions:
  • In a saucepan over medium heat, blend together cream, milk, and sugar until the sugar is fully dissolved, approximately 5 minutes.
  • Using a sharp knife, split the vanilla bean lengthwise and scrape the seeds into the cream mixture. Add the vanilla bean pod to the mixture and bring it to a boil. Once boiled, remove from heat and discard the vanilla bean pod.
  • In a bowl, gently whisk together the egg yolks with 1 cup of the hot cream mixture until smooth and well combined.
  • Return the egg yolk mixture to the saucepan, cook over medium heat while whisking continuously until slightly thickened for about 2 to 3 minutes. The mixture should coat the back of a spoon without boiling.
  • Pour the creamy mixture into a bowl and refrigerate until thoroughly chilled, preferably for 2 hours but overnight is also great.
  • Reduce Irish stout beer in a saucepan over low heat until it's 2/3 cup, approximately 15 minutes. Refrigerate the stout beer syrup for at least 2 hours or overnight.
  • Combine the cold cream mixture with the beer syrup, then pour the mixture into an ice cream maker and freeze following the manufacturer's instructions.
  • Transfer the freshly churned ice cream into an airtight container and freeze.
