Delicious Guinness bread with oats, buttermilk, and stout. Perfect warm with soup or breakfast with butter and honey!
Ingredients:
  • 1 cup regular rolled oats, plus additional
  • 2 cups whole wheat flour
  • 0.5 cup brown sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 cup melted butter
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk
  • 1 (12 fluid ounce) can or bottle Guinness® beer
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and grease an 8x8-inch baking pan.
  • Combine oats, flour, sugar, baking soda, baking powder, and salt in a bowl. In another large bowl, mix butter, vanilla, buttermilk, and Guinness. Gradually fold the flour mixture into the beer mixture until fully combined. Transfer the batter into the prepared baking pan and top with extra oats if preferred.
  • Preheat oven and bake at 450 degrees F (230 degrees C) for 30 minutes. Reduce temperature to 400 degrees F (200 degrees C) and bake for another 30 minutes. Turn off oven, crack the door open, and cool for 30 minutes before transferring to a wire rack.
