Guinness-infused quick bread with molasses, perfect toasted with butter.
Ingredients:
  • 3 cups self-rising flour
  • 1/2 cup white sugar
  • 1/3 cup unsulfured molasses
  • Pinch kosher salt (roughly 1/8 teaspoon)
  • 12 ounces Guinness Extra Stout
  • Butter for greasing the pan and painting the top, about 3 tablespoons
Instructions:
  • Preheat the oven to 350°F and generously grease a 9x5-inch loaf pan with butter.
  • Combine the flour, salt, and sugar in a spacious bowl, whisking until well mixed.
  • Gradually pour the Guinness into the flour mixture, add molasses: Pour the Guinness into the flour mixture, reserving a swig to enjoy if desired. Stir in the beer, then add the molasses halfway through. Gently mix until just combined, avoiding overworking the batter. Aim for a lump-free consistency.
  • Pour the batter into the loaf pan, ensuring it reaches no more than 2/3 full. Bake at 350°F for 50 minutes or until a tester inserted into the deepest part of the loaf comes out clean. Check after 40 minutes if desired.
