Chocolate and ricotta filled wontons in vanilla syrup

Indulge in crispy, syrup-drenched wontons with a decadent chocolate, orange, and ricotta filling.
Ingredients:
  • 300g fresh ricotta
  • 57.20 gm honey
  • 30g dark chocolate, finely grated
  • 1 tsp grated orange rind
  • 24 wonton wrappers
  • Oil, for deep frying
  • Vanilla syrup
  • 165g caster sugar
  • 310ml water
  • 2 vanilla beans, split lengthways
Instructions:
  • Combine ricotta, honey, chocolate, and orange rind in a small bowl. Use electric beaters to mix until smooth. Spread out wonton wrappers in a single layer on a clean surface. Spoon teaspoonfuls of the mixture onto the center of each wonton. Brush edges with egg, then press together firmly to seal. Ensure wontons are completely sealed to prevent them from opening during deep frying.
  • In a large saucepan, combine sugar, water, scraped vanilla seeds, and vanilla pods. Stir over low heat until sugar dissolves. Bring to a boil and let it simmer for 5-8 minutes until slightly thickened into a syrup consistency. Remove from heat and set aside.
  • In a large saucepan or wok, heat oil over medium-high heat. Fry 6 wontons at a time until light golden, about 2-3 minutes. Drain on paper towel and repeat with remaining wontons.
  • Place the wontons in the warm syrup, ensuring they're coated well. Let them sit in the syrup for 2-3 minutes. Divide the wontons into serving bowls, drizzle with some syrup, and serve promptly.
