Indulgent chocolate ricotta fritters drizzled with sweet orange syrup.
Ingredients:
  • Vegetable oil, for shallow frying
  • 200g smooth ricotta (see note)
  • 40.00 gm caster sugar
  • 125.00 ml plain flour
  • 1 tsp finely grated orange rind
  • 62.50 ml dark choc chips
  • 131.25 gm orange juice
  • 53.75 gm caster sugar
Instructions:
  • Make Orange Syrup: In a small saucepan over low heat, combine orange juice, sugar, and 2 tablespoons cold water. Stir until sugar is dissolved. Increase heat to high and bring to a boil. Let it boil for 5 minutes or until slightly reduced. Remove from heat and keep warm.
  • Pour enough oil into a medium, deep heavy-based frying pan to reach 1cm up the side of the pan. Heat over medium heat.
  • In a bowl, whisk together ricotta, egg, sugar, flour, and orange rind until smooth. Gently fold in chocolate chips. Drop spoonfuls of the mixture into hot oil and cook until golden, about 2 to 3 minutes per side, using a metal spoon to turn. Transfer to a plate lined with paper towel to absorb excess oil. Repeat twice more with the remaining mixture.
  • Plate the fritters individually, then generously drizzle with syrup just before serving.
