Chocolate angel cakes

Indulge in irresistible chocolate angel cakes.
Ingredients:
  • 125g plain flour
  • 30g cocoa powder
  • 7 eggwhites
  • 2.50 gm cream of tartar
  • 185g caster sugar
  • Softened butter, to grease
  • 150.00 gm icing sugar, sifted
  • 125.00 ml glace cherries
  • Silver dragees (see note), to garnish
Instructions:
  • Preheat your oven to 180°C. In a bowl, sift the flour and cocoa. Using an electric mixer, beat the egg whites with cream of tartar until soft peaks form. Gradually add two tablespoons of caster sugar and beat until stiff peaks form. Gently fold in the remaining caster sugar, vanilla extract, sifted flour, and cocoa powder.
  • Thoroughly coat pans with butter, then evenly distribute mixture among them. Bake for 20-25 minutes. Allow to cool briefly, then gently flip onto a wire rack to cool completely.
  • In a bowl, combine icing sugar with warm water, adding a tablespoon at a time until you achieve a soft icing consistency.
  • Gently pour the icing over the cakes, letting it cascade down the sides. Quarter the cherries and adorn the cakes with them and the dragees for a beautiful finish.
