Indulge in decadent chocolate babka with rich, soft yeast dough, swirls of chocolate filling, and sweet streusel. Ideal for sharing.
Ingredients:
  • 0.75 cup milk
  • 0.25 cup butter
  • 2 cups bread flour
  • 2 teaspoons active dry yeast
  • 0.25 cup white sugar
  • 0.25 cup water
  • 1 large egg
  • 5 (1 ounce) squares semisweet chocolate, finely chopped
  • 1.5 teaspoons ground cinnamon
  • 0.33333334326744 cup white sugar
  • 0.25 cup butter, chilled
  • 0.25 cup confectioners' sugar
  • 0.25 cup all-purpose flour
  • 1 large egg, beaten
Instructions:
  • Make the dough: Heat milk and butter until just melted. Mix bread flour, all-purpose flour, yeast, and sugar. Combine water, milk-butter mix, egg, and salt with the dry ingredients and mix thoroughly.
  • Knead the dough with the dough hook in a stand mixer on low speed or by hand until smooth and elastic, for approximately 15 minutes. If the dough is too wet, gradually add up to 8 tablespoons of bread flour, 2 tablespoons at a time for a workable dough, being careful not to make it too dry. Cover the dough with a damp cloth and let it rise until doubled in size, around 1 to 1 ½ hours.
  • Prepare the chocolate filling and streusel as the dough rises.
  • Combine finely chopped chocolate, cinnamon, and sugar until mixed. Add chilled butter and cut in using a fork.
  • Prepare the streusel by mixing confectioners' sugar and all-purpose flour, then incorporate chilled butter until the mixture forms coarse crumbs.
  • Once the dough has doubled in size, gently deflate it and divide it into two equal portions. Shape each portion into a ball, cover with a damp cloth, and allow to rest for 10 minutes.
  • On a lightly floured surface, roll out one portion of dough into a 15x4-inch rectangle. Spread half of the chocolate filling over the dough, then roll it up tightly into a log. Seal the seam and shape the log into a circle. Place the ring on a baking sheet lined with parchment paper, seam-side down.
  • Proceed to repeat the previous step with the second piece of dough.
  • Use a serrated knife or kitchen shears to make 1-inch intervals around the rings. Cover with damp kitchen towels and let rise until doubled in size, approximately 30 minutes.
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Prepare the egg wash by whisking together the egg and water in a small dish until well combined.
  • Coat the loaves with egg wash and sprinkle streusel on top. Bake while rotating sheets for even browning until bread reaches a deep golden brown color, approximately 25 minutes.
