Chocolate babka

Decadent chocolate-stuffed brioche with a crispy finish. Simply irresistible!
Ingredients:
  • 600g bread flour
  • 110g caster sugar
  • 20.00 ml instant dried yeast
  • 1.20 gm salt
  • 180ml milk
  • 4 eggs, lightly beaten
  • 200g unsalted butter, plus extra to grease mould
  • 110g brown sugar
  • 100g dark chocolate, finely chopped
  • 75g butter, at room temperature
  • 32.50 gm Dutch cocoa powder
  • 2.50 gm ground cinnamon (optional)
  • 75g caster sugar
  • 35g plain flour
  • 40g cold butter, chopped
Instructions:
  • Thoroughly coat two 11cm x 22cm loaf tins with an extra layer of butter and line the base with baking paper.
  • Combine flour, sugar, yeast, and salt in a large electric mixer bowl. Create a well in the center and pour in milk and egg. Mix on low speed for 1-2 minutes until a soft dough forms. Add butter and increase speed to medium, kneading for 10 minutes until dough is smooth and elastic. Cover with a tea towel and let rise in a warm place for 1 hour until doubled in size.
  • Prepare the filling by mixing all the ingredients in a medium bowl.
  • Gently deflate dough with your fist.
  • Divide the dough in half. Roll out one half on a lightly floured surface into a 35cm x 25cm rectangle. Dot the surface with filling and use your fingers to spread it slightly. Starting at one long edge, carefully roll the dough into a log, gently pulling until it reaches about 45cm in length. Shape the log into a horseshoe and plait it. Transfer to a prepared pan. Repeat the process with the remaining dough and filling. Cover with a tea towel and let it rest in a warm, draft-free place for 1 hour or until the dough doubles in size.
  • Preheat the oven to 180°C or 160°C fan-forced. In a medium bowl, combine all streusel topping ingredients and rub in the butter with your fingers until clumps form. Sprinkle the mixture over the proved dough. Bake for 50 minutes until golden brown. Allow it to stand for 5 minutes before transferring onto a wire rack to cool for at least 10 minutes. Serve warm or at room temperature.
