Chocolate Butter Tarts

Elevate classic butter tarts with a delicious surprise: a decadent layer of chocolate inside.
Ingredients:
  • 12 (3 inch) unbaked tart shells
  • 4 (1 ounce) squares unsweetened baking chocolate (such as Baker's®), divided
  • 0.75 cup lightly packed brown sugar
  • 0.25 cup corn syrup
  • 2 tablespoons butter, softened
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
Instructions:
  • Preheat your oven to a piping hot 450 degrees F (230 degrees C) and line up the tart shells neatly on a baking sheet.
  • Finely chop 3 ounces of chocolate and distribute it evenly among the tart shells.
  • Combine the brown sugar, corn syrup, egg, butter, vinegar, vanilla, and salt in a bowl. Fill the tart shells with the sugar mixture, filling them 3/4 full.
  • Bake in the preheated oven for about 12 minutes until the filling expands and bubbles, and the pastry is lightly golden. Allow it to cool after removing from the oven.
  • Melt the rest of the chocolate in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring each time, for about 1 minute or until melted (microwave times may vary). Drizzle the melted chocolate over the cooled tarts.
