No-bake chocolate tarts

Decadently delicious chocolate tart - simple yet luxurious.
Ingredients:
  • 200g shortbread or digestive biscuits
  • 100g unsalted butter, chopped
  • 26.80 gm golden syrup
  • 100g milk chocolate, chopped
  • 100g dark chocolate, chopped, (plus extra melted chocolate to drizzle and shaved chocolate to garnish - optional)
  • 4.40 gm vanilla extract
  • 24.00 gm pure icing sugar, sifted
  • 200ml thickened cream, plus extra to serve
  • Cocoa powder, to garnish
  • Halved strawberries, to garnish
Instructions:
  • Pulse biscuits in a food processor until fine crumbs form. Melt butter and golden syrup in a saucepan over low heat, then combine in the processor. Press mixture into base and sides of six 10cm tart pans. Chill until ready to use.
  • Combine milk and dark chocolate in a heatproof bowl set over a saucepan of simmering water, ensuring the bowl doesn't touch the water. Remove from heat, stir until smooth, then let it cool for 5 minutes. Mix in the vanilla and gently fold in the icing sugar.
  • Beat the cream until soft peaks form, then gently combine it with the chocolate mixture. Pour the mixture into the tart pans and refrigerate for a minimum of 2 hours until the chocolate filling is firm.
  • Drizzle plates with warm melted chocolate, top tarts generously with whipped cream, and sprinkle with shaved chocolate and cocoa powder. Garnish with fresh strawberries before serving.
