Impress loved ones with decadent chocolate mascarpone cake topped with fresh berries.
Ingredients:
  • 30.90 gm milk
  • 2 x 535g pkts Rich Chocolate Cake Mix
  • 4 Free Range Eggs
  • 120g butter, softened
  • 350ml water
  • 125g raspberries
  • 40g icing sugar mixture
  • 250g mascarpone
  • 125ml thickened cream
  • 80g jam
  • 100g butter, extra, softened
  • 75g blueberries
  • 125g strawberries, quartered
  • White chocolate curls, to serve
Instructions:
  • Preheat the oven to 180C and prepare two 20cm round cake pans by greasing and lining the base with baking paper.
  • Follow the packet directions to prepare the cakes using eggs, butter, and water. Bake for 60 minutes or until a skewer inserted in the centers comes out clean. Allow to cool completely on a wire rack.
  • Strain half of the raspberries through a fine sieve into a bowl, discarding the seeds. Mix in 2 tbsp of icing sugar.
  • In a small bowl, use an electric mixture to whip together the mascarpone, cream, and remaining icing sugar until you achieve firm peaks. Gently fold in half of the raspberry mixture until well combined.
  • Trim the top of each cooled cake with a serrated knife. Place one cake on a serving plate, spread jam on top, add mascarpone mixture, and top with the remaining cake.
  • Create a luscious chocolate icing by mixing the icing mixture from the cake packets with milk and additional butter as per the packet instructions. Once ready, generously spread the icing over the cake. Garnish the top with the leftover raspberries, blueberries, and strawberries. Finish off by drizzling the remaining raspberry mixture and sprinkling with chocolate curls for an irresistibly delightful presentation. Enjoy!
