Indulgent Italian berry and chocolate cake with mascarpone and liqueur - a delicious winter treat.
Ingredients:
  • 600ml thickened cream
  • 4.40 gm vanilla extract
  • 161.25 gm caster sugar
  • 500g mascarpone cheese
  • 332.50 ml freshly brewed strong coffee, cooled
  • 165.00 ml hazelnut-flavoured liqueur
  • 500g packet Sponge Finger biscuits
  • 250g frozen raspberries
  • 250g frozen blueberries
  • 100g dark chocolate, grated
Instructions:
  • Prepare a 24cm (base) springform cake pan by lining it with non-stick baking paper.
  • Whip cream until soft peaks form, then gently stir in vanilla and sugar. Continue whipping until thick, then fold in mascarpone until combined.
  • In a shallow dish, mix coffee and liqueur. Dip each biscuit into the coffee mixture, then use them to line the base of the pan, cutting them to fit if needed. Spread a third of the mascarpone mixture over the biscuits, followed by half of the berries and a third of the chocolate. Repeat the layers for a delicious dessert.
  • Layer soaked biscuits, remaining mascarpone mixture, and the rest of the chocolate on top of the dish. Refrigerate overnight to let the flavors blend and the biscuits soften. Serve and enjoy!
