Use ricotta cheese for a healthier twist on classic tiramisu.
Ingredients:
  • 200g caster sugar
  • 200g frozen mixed berries
  • 250g low-fat ricotta
  • 150g light cream cheese
  • 4.40 gm vanilla extract
  • 375ml coffee
  • 60ml marsala
  • 8 sponge finger biscuits (savoiardi), each broken into 3 pieces
  • 20.00 ml shaved dark chocolate
Instructions:
  • In a saucepan, combine 130g of caster sugar with 1 cup (250ml) water and stir over low heat until the sugar dissolves. Increase heat to medium and simmer for 5 minutes. Add frozen berries and simmer for 2 minutes, stirring to coat them in the syrup. Remove from heat and let it cool completely for a make-ahead step.
  • Combine ricotta, cream cheese, vanilla extract, and the rest of the sugar in a food processor, and blend until creamy.
  • In a bowl, mix the coffee and marsala. Briefly dip half the sponge finger pieces in the coffee mixture and divide among 4 glasses. Add 2-3 tablespoons of the cheese mixture over the sponge fingers in each glass, followed by some berries. Repeat layering with more dipped sponge fingers, cheese mixture, and berries until all ingredients are used, ending with a dollop of cheese mixture and a sprinkle of grated chocolate on top. Serve immediately.
