Indulge guilt-free with this effortless berry ice cream cake!
Ingredients:
  • 2 litres low-fat vanilla ice-cream
  • 500g mixed berries, fresh or frozen
  • 100g packet (10) pavlova nests, crushed
  • White chocolate curls (optional), to serve
  • Icing sugar mixture, to dust
  • Mixed berries, extra, to serve
Instructions:
  • Prepare a 23cm round (base) springform pan by greasing it and lining the base and sides with baking paper.
  • Softening the ice-cream: Allow the ice-cream to gently soften in a large bowl for about 10 minutes. Once slightly softened, mix in the berries and meringue thoroughly.
  • Pour mixture into pan, smoothing the top. Seal with plastic wrap and freeze for at least 6 hours or overnight until solid.
  • Transfer the cake onto a plate. Sprinkle with chocolate curls (if desired) and additional berries. Serve promptly with a sprinkle of icing sugar on top.
