Indulge guilt-free in this decadent, low-calorie frozen treat that rivals traditional ice cream in flavor and creaminess.
Ingredients:
  • 3 200g cartons country-style reduced-fat yoghurt (Attiki brand)
  • 375mls (1 1/2 cups) creamy smooth vanilla custard (Pauls brand)
  • 150g (1 cup) icing sugar, sifted
  • 250g (1 punnet) ripe strawberries, hulled, quartered
  • 200g (1 punnet) raspberries
  • Extra berries (optional), to serve
Instructions:
  • In a mixing bowl, whisk together yogurt, custard, half of the icing sugar, and vanilla essence until fully combined.
  • Transfer the mixture into a 2-litre (8-cup) plastic container, cover it, and freeze for 4-6 hours until it's lightly frozen.
  • In a blender, combine strawberries, raspberries, and the rest of the icing sugar. Blend until smooth. Chill in the fridge until needed.
  • Break the frozen yogurt mixture into chunks with a metal spoon and place it in a large mixing bowl. Use electric beaters to whip it until smooth. Gently fold the berry puree into the yogurt mixture with a large metal spoon until well combined.
  • Place the mixture back in the plastic container, cover it, and freeze for at least 6 hours until completely frozen.
  • Chill the container in the fridge 1-1 1/2 hours before serving to soften. Serve the frozen yogurt with extra berries, if desired.
