Berry yoghurt parfait

Indulge guilt-free with this delightful low-fat berry parfait!
Ingredients:
  • 125ml apple juice
  • 40.00 gm caster sugar
  • 150g blueberries
  • 150g raspberry
  • 130g yoghurt
  • 330g lemon-flavoured yoghurt
Instructions:
  • Combine apple juice and sugar in a small saucepan over medium heat until sugar dissolves. Simmer for 4 minutes, then take off heat and lower the heat. Stir in blueberries and cook for 2 minutes until the syrup turns purple. Allow it to cool.
  • Blend the raspberries and Yoplait in a food processor until smooth.
  • Scoop the frozen raspberry yogurt into four 3/4 cup (180ml) glasses or dishes, layer with the luscious lemon cream, and drizzle with the irresistible berry syrup.
