Berry cheesecake parfaits

Whip up a quick and delicious berry cheesecake parfait in under 30 minutes!
Ingredients:
  • 250g reduced-fat cream cheese
  • 53.75 gm caster sugar
  • 170g tub low-fat berry yoghurt
  • 300g frozen mixed berries, thawed
  • 150g packet almond biscotti, chopped
Instructions:
  • With an electric mixer, blend the creamy cheese and sugar until velvety. Gently fold in the yoghurt and 1/4 cup of fresh berries until evenly mixed.
  • Distribute the remaining 2/3 cup of berries evenly among four 2-cup glasses. Top each with half of the biscotti, followed by 2 tablespoons of the cheese mixture. Repeat the layers, ending with a final layer of berries on top. Serve and enjoy!
