Berry cheesecake bites: Irresistible bite-sized sweet delight perfect for sharing.
Ingredients:
  • 250g Arnott’s Nice biscuits
  • 125g butter, melted
  • 500g cream cheese, at room temperature
  • 397g can sweetened condensed milk
  • 42.00 gm lemon juice
  • 2 Free Range Eggs
  • 375.00 ml frozen mixed berries
Instructions:
  • Preheat your oven to 150C. Grease and line the base and 2 long sides of a 20cm x 30cm lamington pan with baking paper, making sure the paper overhangs the sides.
  • Finely crush biscuits in a food processor. Combine with butter until mixed well. Press mixture into prepared pan using a flat-bottomed glass. Chill in the fridge for 30 minutes.
  • In a food processor, blend the cream cheese until smooth. Mix in the condensed milk and lemon juice until smooth. Finally, add the eggs and blend until fully combined.
  • Layer half of the berries over the base, then pour in the cream cheese mixture and make it smooth. Top with the rest of the berries. Bake for 30 minutes until just set, then turn off the oven. Let it cool with the oven door slightly open for 1 hour. Chill in the fridge for 2 hours. Cut into squares and serve.
