Turkish cheesecake slice

Ingredients:
  • 250g pkt Choc Ripple biscuits
  • 100g butter, melted
  • 9.00 gm gelatine powder in 2 tbsp hot water
  • 250g cream cheese
  • 395g can sweetened condensed milk
  • 126.25 gm thickened cream
  • 4 x 55g Turkish Delight bars, chopped
  • grated dark chocolate, to sprinkle
Instructions:
  • Prepare a 16cm x 26cm slab pan by lining it with non-stick baking paper. Use a food processor to crush Choc Ripple biscuits into crumbs, then add butter and process until mixed. Firmly press the mixture into the base of the pan.
  • Start by dissolving the gelatine powder in hot water and allow it to cool. Then, with the magical touch of an electric beater, whip together cream cheese, condensed milk, and thickened cream until luxuriously smooth. Incorporate the cooled gelatine mixture and blend until heavenly.
  • Smooth a decadent layer of cheesecake mixture onto the base, then generously sprinkle with Turkish Delight bars. Add the remaining cheesecake mixture on top and finish by sprinkling with grated dark chocolate. Allow to cool in the fridge until firm.
