White Christmas cheesecake recipe

Festive no-bake cheesecake with white Christmas base, topped with whipped cream, Turkish delight, m&m's, and marshmallows for an easy and delicious treat.
Ingredients:
  • 1 1/2 x 180g blocks white chocolate, chopped
  • 750.00 ml puffed rice cereal
  • 42.50 gm desiccated coconut
  • 3 x 55g Turkish delight chocolate bars, chopped
  • 82.50 ml pistachios, chopped
  • Extra chopped Turkish delight, to decorate
  • Red m&m’s, to decorate
  • Mini red m&m’s, to decorate
  • Silver cachous, to decorate
  • White mini marshmallows, to decorate
  • 500g cream cheese, softened
  • 141.90 gm caster sugar
  • 50g sachet coconut milk powder
  • 9.00 gm gelatine powder
  • 40.00 gm boiling water
  • 300ml thickened cream
Instructions:
  • Prepare a 22cm round springform pan by greasing it and lining the base and sides with baking paper. Also, line a baking tray with baking paper.
  • Put the chocolate in a microwave-safe bowl. Microwave on HIGH for 1 to 2 minutes, stopping to stir with a metal spoon every 30 seconds, until completely melted and smooth.
  • In a bowl, mix rice cereal, coconut, Turkish delight, and pistachio. Add chocolate and stir until well combined. Press 2/3 of the mixture into a pan to cover the base evenly. Spread the rest of the mixture onto a tray without smoothing it out. Refrigerate both until needed.
  • Prepare Filling: In an electric mixer, blend cream cheese, sugar, and vanilla until smooth. Mix in milk powder. In a separate bowl, dissolve gelatine in boiling water. Combine the gelatine mixture with the cream cheese blend until smooth. Finish by adding cream and beating until a thick, smooth consistency forms.
  • Smooth the luscious filling over the prepared base. Let it chill in the refrigerator for a minimum of 6 hours until firm.
  • Transfer the cheesecake to a serving plate. Crumble the remaining rice cereal mixture into small pieces. Sprinkle half on top of the cheesecake. Spoon dollops of whipped cream on top. Garnish with the rest of the rice cereal mixture, additional Turkish delight, M&M’s, cachous, and marshmallows. Serve and enjoy!
