Create a festive no-bake Christmas cheesecake dessert with a mix of jellies, condensed milk, and cream cheese. Perfect for stress-free entertaining!
Ingredients:
  • 85g packet apple jelly crystals
  • 750ml (3 cups) of boiling water
  • 85g packet watermelon jelly crystals
  • 85g packet strawberry jelly crystals
  • 375g cream cheese, at room temperature
  • 395g can sweetened condensed milk
  • 50g coconut milk powder
  • 125ml (1/2 cup) thickened cream
  • 9.00 gm gelatine powder
  • 8 plain sweet biscuits
Instructions:
  • Prepare a deep 7cm-deep, 10 x 20cm loaf pan by lining it with plastic wrap. In a heatproof jug, combine the apple jelly with 250ml (1 cup) of boiling water, stirring until the jelly dissolves. Transfer the mixture to a small heatproof plastic container. Repeat the same process with the watermelon jelly, transferring it to a separate heatproof plastic container.
  • Pour the strawberry jelly into a heatproof jug. Add 250ml (1 cup) of boiling water and stir until jelly dissolves. Pour half of the jelly into the prepared pan and the rest into a separate container. Chill all the jelly in the fridge for 6-8 hours or overnight to set.
  • Transfer the jelly onto a clean work surface and chop it into small pieces. In a large bowl, whip the cream cheese until smooth, then mix in the condensed milk and coconut powder until smooth. In another bowl, whip the cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture. In a small microwave-safe bowl, combine 60ml (1/4 cup) water with the gelatine, microwave for 10 seconds, and whisk until the gelatine dissolves. Stir the gelatine mixture into the cream cheese mixture until well combined.
  • Gently combine the jelly with cream cheese using a spatula. Transfer the mixture into the prepared pan. Place the biscuits on top of the cheesecake, trimming as needed. Chill in the fridge for 6 hours or overnight until set. Unmold onto a serving plate before serving.
