Decadent no-bake slice with buttery biscuit base, creamy cheesecake center, and pink jelly Turkish delight topping. A must-have for your recipe collection!
Ingredients:
  • 200g gingernut biscuits
  • 80g butter, melted
  • 1/4 tsp ground allspice
  • 40.00 gm boiling water
  • 6.00 gm gelatine powder
  • 375g cream cheese, softened
  • 70.95 gm caster sugar
  • 1/2 tsp finely grated orange rind
  • 166.65 gm thickened cream
  • 150g white chocolate with vanilla, melted
  • 125.00 ml pistachio kernels, toasted
  • 85g packet creaming soda jelly
  • 2 tsp rosewater essence
Instructions:
  • Prepare a 19cm square cake pan by greasing it and lining the base and sides with baking paper, ensuring the paper extends 5cm above each side.
  • In a food processor, pulse the biscuits until coarse crumbs form. Add the butter and allspice, then pulse to mix. Press the mixture into the base of the prepared pan and chill until needed.
  • Pour boiling water into a small heatproof jug. Sprinkle gelatine over the water and stir until dissolved. Allow to cool for 5 minutes.
  • In an electric mixer, whip cream cheese, sugar, and orange zest until fluffy. Gradually add cream, gelatin mixture, and chocolate while mixing until slightly thickened. Fold in pistachios, then transfer mixture to a pan. Chill in the refrigerator for 2 hours until just set.
  • Prepare jelly as instructed on the packet, then add a splash of rosewater essence. Chill for 1 hour until cool but not firm. Pour on top of the cheesecake, then refrigerate for 4 hours or overnight until the jelly is firm. Carefully remove from the pan, slice into squares, and enjoy.
