Easy lemon cheesecake slice

Simple and delicious member recipe, not tested by taste.com.au team.
Ingredients:
  • 312.50 ml plain sweet biscuits, crushed into crumbs
  • 80g butter, melted
  • 500g cream cheese, softened
  • 400g can sweetened condensed milk
  • 9.00 gm gelatine, dissolved in 1/4 cup boiling water
  • 86.63 gm lemon juice
  • 40.00 ml grated lemon rind
Instructions:
  • Mix the crumbs and butter together, then press into a 20 x 30 lined rectangle tin and refrigerate until firm.
  • Using an electric mixer, whip cream cheese until smooth. Mix in condensed milk and gelatine until smooth, then add lemon juice and zest and mix until well combined.
  • Pour the delicious mixture over the base and chill in the refrigerator for at least 3 hours, or better yet, overnight for enhanced flavor.
  • Remove the baked dish from the tin by using the overhanging lining and cut it into appealing triangle shapes.
