Indulgent creamy no-bake strawberry jam slice, easily customizable with your favorite jam or lemon curd. Perfect as a make-ahead dessert with a light and soft texture.
Ingredients:
  • 20.00 gm custard powder
  • 250ml (1 cup) milk
  • 20.00 gm caster sugar
  • 250g packet Arnott’s Granita Biscuits
  • 125g butter, melted
  • 500g cream cheese, at room temperature, chopped
  • 150g (1 cup) icing sugar mixture
  • 300ml carton thickened cream, whipped to firm peaks
  • 115g (1/3 cup) strawberry jam
Instructions:
  • Prepare a 17 x 27cm slice pan by greasing it and lining it with overhanging baking paper on the long sides.
  • In a small bowl, mix custard powder with 2 tbsp milk until smooth. In a small saucepan, combine caster sugar with the rest of the milk. Stir in the custard mixture. Cook over low heat until combined. Increase heat to medium-low and cook, stirring constantly, until boiling. Transfer to a bowl and cover with plastic wrap. Chill in the fridge for 2 hours before serving.
  • Crush biscuits in a food processor until coarse. Mix in butter until well combined. Transfer mixture to pan and press firmly using a straight-sided glass. Chill in the fridge for 30 minutes until firm.
  • In a bowl, use electric beaters to mix cream cheese and icing sugar until smooth. Add chilled custard and beat until combined. Fold in whipped cream using a spatula. Drizzle jam over mixture and gently combine. Spoon into base, smooth the surface, then chill in the fridge for 4 hours until set.
  • Transfer the dish to a stylish serving board, then elegantly cut it into perfectly portioned pieces ready to be enjoyed by your guests.
