Indulge in our easy lamington custard slice, featuring layers of vanilla custard, chopped strawberries, and jam-filled lamingtons. Top with whipped cream and strawberry jam for a quick, delightful treat.
Ingredients:
  • 500g strawberries
  • 480g (2 cups) French Vanilla Double Thick Custard
  • 250g tub mascarpone
  • 9.00 gm gelatine powder
  • 2 x 6 pack jam filled lamingtons (tip: can also use plain lamingtons if preferred)
  • 250ml (1 cup) thickened cream, whipped to firm peaks
  • Strawberry jam, strained, to decorate
Instructions:
  • Prepare a 7cm-deep, 10 x 20cm loaf pan by greasing it and lining the base and sides with baking paper, making sure to leave a 6cm overhang above the sides.
  • Set aside 6 strawberries for garnishing. Remove the hulls and cut the rest of the strawberries in half.
  • Combine custard and mascarpone in a bowl and beat with electric beaters until just mixed.
  • In a small heatproof bowl, add 2 tbsp of water and sprinkle the gelatine over it. Stir until fully combined. Set the small bowl inside a larger heatproof bowl. Carefully pour boiling water into the larger bowl until it reaches halfway up the side of the smaller bowl. Let it sit for 5 minutes or until the gelatine dissolves, stirring occasionally. Finally, beat the gelatine mixture into the custard mixture until well combined.
  • 1. Using a serrated knife, carefully halve the lamingtons horizontally. Arrange a layer of lamington halves, coconut-side down, in the base of the prepared pan, adjusting to fit any spaces. 2. Spread half of the custard mixture on top and level the surface. Add half of the halved strawberries, cut-side down, gently pressing them into the custard. Smooth the top. 3. Layer another round of lamingtons, then the remaining custard mixture and strawberries. Finish with a final layer of lamingtons, coconut-side up. 4. Cover the pan with plastic wrap and refrigerate for 6 hours or overnight to set.
  • Transfer the slice onto a serving board or plate, gently removing the paper if needed to release. Add a dollop of cream and the reserved strawberries on top. Drizzle with jam before cutting into slices for serving.
