Custard cream vanilla slice recipe

Elevate store-bought cookies into a beautiful vanilla slice with a delightful jam filling.
Ingredients:
  • 26 (about 1 1/2 x 250g pkts) custard cream biscuits, halves separated
  • 100g (2/3 cup) custard powder
  • 1L (4 cups) milk
  • 8.80 gm vanilla extract
  • 55g (1/4 cup) caster sugar
  • 105g (1/3 cup) raspberry jam
  • 12.00 gm pure icing sugar
Instructions:
  • Prepare a 3cm-deep, 20 x 30cm slice pan by greasing it and lining the base and two long sides with baking paper, making sure to leave some paper hanging over the edges.
  • Remove the filling from the biscuits and set aside. Arrange half of the biscuits on the bottom of the pan, trimming to fit if necessary.
  • In a saucepan, combine the custard powder and 125ml (1/2 cup) milk, whisk until smooth. Stir in the remaining milk, vanilla, and caster sugar. Over medium heat, cook and stir constantly for 5 minutes until the custard boils. Continue stirring for 2 more minutes until thickened. Mix in the reserved biscuit filling, cover the custard surface with plastic wrap, and let it cool for 30 minutes. Enjoy!
  • Pour the luscious warm custard over the biscuits in the pan, followed by a generous drizzle of jam. Layer with the remaining biscuits and chill in the fridge for 4 hours, allowing it to set perfectly.
  • Sprinkle the slice with a dusting of icing sugar. Cut into even pieces using the biscuit shape as a guide. Serve and enjoy!
