Ingredients:
  • 2 bought puff pastry sheets
  • 250ml (1 cup) milk
  • 1 vanilla bean, split
  • 97.50 gm Cornflour
  • 65.00 gm custard powder
  • 220g (1 cup) caster sugar
  • 750ml (3 cups) thickened cream
  • 50g Unsalted Butter
  • Icing sugar, to dust
Instructions:
  • Preheat the oven to 210°C. Line a 23cm square pan with aluminum foil, extending the foil over the edges for easy removal.
  • Place the pastry sheets on a baking tray lined with non-stick baking paper and bake for 8-10 minutes until golden brown. Let them cool, then place one pastry sheet cooked-side up in the bottom of the pan (trim if needed to fit).
  • In a saucepan over medium heat, warm milk with scraped vanilla seeds and the bean. Let it gently heat up, then set aside for 10 minutes.
  • Combine cornflour, custard powder, and caster sugar in a pan. Strain milk into the pan, discard the bean. Whisk until smooth. Add cream and heat over low heat, stirring constantly until thickened and boiling. Stir in butter until well combined. Remove from heat and whisk in egg yolks one at a time until smooth. Pour mixture into pastry-lined pan and let it cool slightly. Top with the other piece of pastry, cooked-side up. Refrigerate overnight before serving.
  • Cut the cooked mixture into squares and sprinkle with icing sugar before serving.
