Whip up a simple and delightful weeknight dessert for a mood-boosting treat.
Ingredients:
  • 1 sheet (25 x 25cm) frozen ready-rolled puff pastry, just thawed
  • 52.80 gm strawberry jam
  • 160ml (2/3 cup) Paul's Vanilla Custard
  • 16 strawberries, washed, hulled, thinly sliced
  • Icing sugar, to dust
Instructions:
  • Preheat the oven to 200°C. Line a baking tray with non-stick baking paper. Divide the pastry sheet into 8 rectangles. Place them on the tray and prick them all over with a fork. Bake for 10 minutes until puffed and golden. Let them cool for 10 minutes, then split each piece in half horizontally with a large serrated knife.
  • Evenly spread jam and custard on half of the pastry pieces. Add strawberries and top with the remaining pastry pieces. Dust with icing sugar before serving immediately.
