Indulgent strawberry pie with velvety vanilla custard and a graham cracker crust, crowned with luscious fresh berries.
Ingredients:
  • 3 cups sliced fresh strawberries
  • 1 cup white sugar
  • 3 tablespoons cornstarch
  • 0.75 cup cold water
  • 1 cup half-and-half
  • 1 egg
  • 1 egg yolk
  • 0.75 cup white sugar
  • 0.33333334326744 cup all-purpose flour
  • 3 tablespoons butter
  • 2 teaspoons vanilla extract
  • 2 cups fresh strawberries, halved
  • 1 (9 inch) prepared graham cracker crust
Instructions:
  • Combine 3 cups of sliced strawberries and 1 cup of sugar in a saucepan over medium heat. Cook until the strawberry mixture boils, stirring often.
  • Combine cornstarch and water in a small bowl, then add to mashed strawberries on medium-low heat.
  • Simmer the strawberry mixture, stirring continuously, until it thickens, approximately 10 minutes. Then, set it aside.
  • In a saucepan, heat the half-and-half until it just starts to boil, then take it off the heat.
  • Using an electric mixer, whisk egg and egg yolk in a bowl until frothy. Slowly add 3/4 cup of sugar and continue beating until the mixture is thick, pale yellow, and forms a ribbon when the beater is lifted, approximately 3 minutes.
  • Incorporate flour until a smooth consistency is achieved.
  • Slowly stream the hot half-and-half into the egg mixture while continuously beating.
  • Transfer the mixture back to the saucepan and heat over medium until the custard thickens and comes to a boil. Lower the heat to medium-low and cook while stirring constantly until the flour is cooked through, for about 2 to 3 minutes more.
  • Take the custard off the heat, then mix in the butter and vanilla extract.
  • Smooth custard evenly onto the graham cracker crust. Add the cooked strawberry mixture on top of the custard. Garnish with fresh strawberries.
  • Refrigerate for a minimum of 3 hours before enjoying.
