No-bake lemon cheesecake slice with biscuit base and marshmallow topping.
Ingredients:
  • 250g packet ginger nut biscuits
  • 70g unsalted butter, melted
  • 30.00 gm boiling water
  • 9.00 gm gelatine powder
  • 500g cream cheese, softened
  • 395g can sweetened condensed milk
  • 2 tsp finely grated lemon rind
  • 65.63 gm lemon juice, strained
  • 125.00 gm boiling water
  • 12.00 gm gelatine powder
  • 215.00 gm caster sugar
  • 2.20 gm vanilla extract
Instructions:
  • Prepare the slice pan by greasing it and lining the base and sides with baking paper, ensuring the paper extends 5cm above the edges on all sides. Place biscuits in a food processor and blend until they form fine crumbs. Add butter and process until just mixed. Firmly press the biscuit mixture into the base of the pan. Chill in the refrigerator for 15 minutes or until set.
  • Prepare the Lemon filling by pouring 1 1/2 tablespoons of boiling water over gelatine in a small bowl, stir until dissolved. Clean the food processor and blend cream cheese until almost smooth. Then add condensed milk, lemon rind, and juice, and continue processing until combined. Finally, add the gelatine mixture and combine. Pour over the prepared base, level the top, score a criss-cross pattern with a knife, and refrigerate for 2 hours until set.
  • Prepare the Marshmallow topping by starting with 1/2 cup of boiling water in a small bowl. Sprinkle gelatine over the water and stir until fully dissolved. Next, combine sugar and 2 tablespoons of water in the large bowl of an electric mixer. Beat on high speed for 4 minutes. While the mixer is running at medium speed, slowly pour in the gelatine mixture. Increase the speed to high and beat for another 7 minutes until the mixture is thick and fluffy. Add vanilla and continue to beat until fully incorporated. Spread the marshmallow topping over the filling, refrigerate for 2 hours until firm, and serve the slice cut into squares.
