Fairy bread jelly slice recipe

Transform childhood fairy bread into a decadent no-bake cheesecake slice using condensed milk and Tim Tams.
Ingredients:
  • 2 x 165g packets white chocolate Tim Tams
  • 28.05 gm desiccated coconut
  • 100g butter, melted, cooled
  • 395g can sweetened condensed milk
  • 131.25 gm lemon juice
  • 6.00 gm gelatine powder
  • 165.00 gm boiling water
  • 62.50 ml bright sprinkles, plus extra, to decorate
  • 85g packet Jelly Creaming Soda
  • 250.00 gm boiling water
  • 125.00 gm cold water
Instructions:
  • Prepare a slice pan by greasing it and lining the base and sides with baking paper, making sure to extend the paper 2cm above the edges of the pan.
  • In a food processor, combine biscuits and coconut until finely ground. Add butter and process until mixed. Press the mixture evenly into the pan's base. Chill in the fridge for 10 minutes.
  • Combine condensed milk and lemon juice in a bowl, whisk until smooth. Sprinkle gelatine over boiling water and whisk with a fork until dissolved. Let it sit for 2 minutes. Gradually whisk the gelatine mixture into the milk mixture until well combined. Allow it to cool for 3 to 4 minutes. Gently fold in sprinkles. Pour over prepared base and refrigerate for 2 hours until set.
  • Place jelly crystals in a heatproof jug and pour boiling water over them. Stir until dissolved. Add cold water and let it cool to room temperature for 1 hour.
  • Drizzle jelly over slice with a delicate touch. Chill in the refrigerator for a minimum of 3 hours until firm.
  • Gently transfer the slice from the pan and slice into pieces. Sprinkle with extra sprinkles for a decorative touch before serving.
