Indulgent no-bake white chocolate loaf loaded with mini marshmallows and juicy jubes - a festive delight!
Ingredients:
  • 45g (1/4 cup) bright sugar strands (sprinkles)
  • 350g packet jubes, halved
  • 200g plain digestive biscuits, broken into pieces
  • 26g (1/2 cup) vanilla mini marshmallows
  • 175g butter, chopped
  • 395g can sweetened condensed milk
  • 540g white chocolate, chopped
Instructions:
  • Prepare a 7.5cm-deep, 8.5 x 22.5cm loaf pan by greasing it and lining the base and sides with baking paper, allowing the paper to extend 2cm above the edge of the pan. Sprinkle the sugar strands evenly over the base of the pan.
  • In a large bowl, mix together the jubes, biscuits, and marshmallows. Set aside for later.
  • In a saucepan over medium-low heat, combine butter and condensed milk. Stir and heat for 2-3 minutes until butter is melted and mixture is warmed through. Remove from heat, then add chocolate. Let it sit for 3 minutes and stir until smooth. Drizzle 125ml (1/2 cup) of the chocolate mixture over the sprinkles without stirring.
  • Combine the rest of the chocolate mixture with the biscuit mixture until well mixed. Transfer the mixture into the prepared pan and smoothen the surface. Lightly tap the pan on the counter to eliminate any air bubbles. Chill in the fridge overnight or until firm.
  • Gently transfer the loaf to a serving plate and let it rest for 10 minutes. Cut into slices using a warmed and dried sharp knife to serve.
