Decadent no-bake slice with creamy condensed milk cheesecake base, topped with an array of KitKat flavors: chocolate, gold, and double cookies and cream.
Ingredients:
  • 250g pkt plain sweet biscuits
  • 125g butter, melted
  • 9.00 gm gelatine powder
  • 500g cream cheese, chopped, at room temperature
  • 395g can sweetened condensed milk
  • 2 tsp vanilla bean paste
  • 9 x 45g assorted Nestlé KitKat bars (see note)
Instructions:
  • Prepare a 19cm x 29cm slice pan by greasing it and lining the base and two long sides with baking paper, ensuring the paper overhangs the sides.
  • In a food processor, finely crush the biscuits. Add the butter and process until well combined. Spoon the mixture into the prepared pan, then use a flat-bottomed glass to evenly spread and press it over the base. Chill in the fridge for 30 minutes.
  • In a small heatproof bowl, pour in 60ml (1/4 cup) of water and sprinkle gelatine over it. Stir until fully combined. Set the small bowl inside a larger heatproof bowl and pour boiling water into the larger bowl halfway up the side of the smaller bowl. Let it sit, stirring occasionally, for 5 minutes until the gelatine dissolves.
  • Using electric beaters, whip cream cheese until smooth, then add condensed milk and vanilla bean paste. Beat until well combined. Finally, add gelatin to the mixture and beat until fully incorporated.
  • Cover the biscuit base with the creamy cheese mixture and make sure to spread it evenly. Refrigerate for at least 6 hours, ideally overnight, until fully set.
  • Place KitKat bars in an attractive design on top of the cheesecake, trimming as needed. When ready to serve, slice using a small sharp knife dipped in warm water.
