Fluffy chocolate carrot cake with natural sweetness and cream cheese frosting.
Ingredients:
  • 200g stevia
  • 480g carrot
  • 260g self-raising flour
  • 200g yoghurt
  • 55g walnut
  • 25g cocoa powder
  • 60ml vegetable oil
  • 1.25 gm bicarbonate of soda
  • 5.00 gm ground cinnamon
  • Grated dark chocolate, to serve
  • Walnuts, extra, to serve
  • 250g cream cheese, chopped
  • 125g butter, chopped
  • 20.00 ml Stevia Sweet Baking Granules
Instructions:
  • 1. Preheat the oven to 180°C. Grease a 20cm round cake pan and line with baking paper. Using an electric mixer, combine eggs, sweetener, and vanilla until smooth. Gently fold in carrot, flour, yogurt, walnuts, cocoa powder, oil, bicarbonate of soda, and cinnamon. Spread mixture into the pan evenly.
  • Bake for 1 hour or until a skewer inserted in the center comes out clean. Let it cool in the pan for 5 mins, then transfer to a wire rack to cool completely.
  • To prepare the cream cheese frosting, use an electric mixer to blend cream cheese, butter, and sweetener in a bowl until creamy.
  • Coat cake generously with frosting, then sprinkle with chocolate and extra walnuts for added decadence.
