Indulgent carrot cake muffins with a delightful twist of chocolate chips.
Ingredients:
  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 1 cup shredded coconut
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground nutmeg
  • 2 cups shredded carrots
  • 1.5 cups oil
  • 1 (8 ounce) can crushed pineapple
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1 (6 ounce) package chocolate chips, or to taste
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 12-cup muffin tin by greasing or lining with paper liners.
  • In a large bowl, combine flour, sugar, coconut, cinnamon, baking soda, nutmeg, and salt. Add carrots, oil, pineapple, eggs, and vanilla extract; mix until well combined. Gently fold in chocolate chips, then spoon batter into muffin cups.
  • Bake until a toothpick inserted in the center of a muffin comes out clean, for 15-30 minutes in the preheated oven. Let cool for 20 minutes before serving.
