Indulgent chocolate cheesecake, a crowd favorite with extra chocolatey goodness.
Ingredients:
  • Melted butter, to grease
  • 1 x 250g pkt plain chocolate biscuits, coarsely broken
  • 1.25 gm ground cinnamon
  • 150g butter, melted
  • 250g dark chocolate, finely chopped
  • 155g (3/4 cup) caster sugar
  • 3 eggs
  • 3 x 250g pkts cream cheese, at room temperature
  • 20.00 gm cocoa powder, sifted
  • 4.40 gm vanilla essence
  • 600g Light Sour Cream
  • Cocoa powder, extra, to serve
  • Double cream, to serve
Instructions:
  • Preheat your oven to 160°C. Grease a 24cm springform pan with melted butter and line the base with non-stick baking paper.
  • Combine biscuit, cinnamon, and butter in a food processor until mixed. Press mixture firmly into prepared pan using a glass. Chill in the fridge for 30 minutes before proceeding.
  • Melt the chocolate in a heatproof bowl set over simmering water, ensuring the bowl doesn't touch the water. Stir constantly for 5 minutes until smooth.
  • In a large bowl, use an electric beater to whip together the sugar and eggs until light and creamy. Mix in the cream cheese until well combined. Gently fold in the chocolate, cocoa powder, and vanilla using a metal spoon. Stir in the sour cream until fully combined.
  • Transfer the mixture onto the biscuit base and ensure the surface is even. Bake for 1 hour or until the center is just set. Turn off the oven and let the cake cool inside with the door slightly open for 2 hours to prevent cracking. Refrigerate for 2 hours to chill. Dust with cocoa powder and enjoy with a dollop of cream.
