Chocolate cheesecake

Create a decadent cheesecake with a biscuit base, luscious chocolate filling, and elegant white chocolate swirls.
Ingredients:
  • 350 g digestive biscuits
  • 100 g unsalted butter
  • 300 g cream cheese
  • 2 tablespoons caster sugar
  • 1 tablespoon vanilla extract
  • 300 ml double cream
  • 200 g dark chocolate (70%)
  • 100 g white chocolate
Instructions:
  • Preheat the oven to 180ºC/350ºF/gas 4. Crush the biscuits into fine crumbs using a food processor. Melt the butter in a saucepan over medium-low heat, then mix with the crushed biscuits. Press the biscuit mixture into a 25cm tart tin, spreading it evenly over the base and up the sides until covered. Bake for 8 minutes, then cool. Beat cream cheese, sugar, and vanilla extract in a bowl until smooth. Gradually mix in 250ml of cream until silky. Melt dark and white chocolate separately over simmering water. Fold the dark chocolate into the cream cheese mixture until smooth. Pour into the tart case. Drizzle melted white chocolate on top and swirl for a decorative touch. Chill in the fridge for at least 2 hours until set. Slice and serve.
