Indulgent chocolate cake with a spicy kick, loaded with crunchy walnuts and hidden zucchini goodness.
Ingredients:
  • 2.5 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1.75 cups white sugar
  • 0.5 cup butter
  • 0.5 cup vegetable oil
  • 2 eggs
  • 1 tablespoon chile powder
  • 1 teaspoon vanilla extract
  • 0.5 cup buttermilk
  • 2 cups grated zucchini
  • 0.75 cup chopped walnuts
  • 6 ounces semisweet chocolate chips
Instructions:
  • Preheat your oven to 325 degrees F (165 degrees C) and generously grease a 9x13-inch cake pan.
  • Combine flour, cocoa powder, salt, and baking soda in a bowl and mix well.
  • Combine sugar, butter, vegetable oil, and eggs in a large bowl, then stir in chili powder and vanilla extract.
  • Combine the flour mixture with the sugar mixture, then mix in buttermilk until well incorporated. Fold in zucchini to complete the batter.
  • Evenly spread the batter in the prepared cake pan and generously sprinkle with chocolate chips and walnuts.
  • Bake in the oven preheated to perfection until a toothpick inserted in the center emerges clean, for about 55 minutes.
