Indulgent ice cream cookie cake with customizable flavors, cookie crust, whipped cream, fudge, and cherries on top.
Ingredients:
  • 1 (18 ounce) package small chocolate chip cookies
  • 0.25 cup margarine, melted
  • 1 cup hot fudge topping, divided
  • 2 quarts vanilla ice cream, divided
  • 1 cup whipped cream
  • 12 cherries
Instructions:
  • Crush half of the cookies (about 20) into fine crumbs. Mix the crumbs with melted margarine and press into the base of a 9-inch springform pan or pie plate. Arrange the remaining cookies around the edges of the pan. Spread 3/4 cup of fudge topping over the crust. Freeze for 15 minutes.
  • Soften 1 quart of ice cream in the microwave or on the countertop. Once the crust has chilled, spread the softened ice cream over the fudge layer and freeze for 30 minutes.
  • Take the remaining quart of ice cream and scoop it into balls. Arrange the ice cream balls over the spread ice cream layer. Freeze for at least 4 hours or overnight until firm.
  • Garnish with the remaining fudge topping, whipped cream, and cherries before serving.
